  2. You need 1 slice of bread (or more to make more / bigger meatballs).

  4. Prepare 1 tsp of salt.
  5. You need 1 tsp of parsley.
  6. It's 1 cup of cheese (any kind you like).
  7. You need 250 grams of streaky bacon.
  8. It's 8 of toothpicks.
  9. You need 1 of oil (for frying).

Shape one beef portion around each cheese ball. In a shallow bowl, beat eggs for coating. Place cracker crumbs in another bowl. Heat oil in a large cast-iron or other heavy skillet over medium heat.

  1. Preheat the oven to 180C..
  2. Break the bread in big-ish pieces into a bowl. Cover with enough milk so the bread soaks up all the milk..
  3. Place the mince in a seperate bowl and add the salt, parsley and cheese. Mix well..
  4. Mash the bread with a fork to incorporate all the milk..
  5. Add the bread mixture to the mince mixture and mix well..
  6. Roll the mixture into balls and cover with bacon, secure with a toothpick..
  7. Pour oil into an oven save dish and place the meatballs evenly in the dish. Bake in the oven for 20 - 30 minutes or until the bacon is crispy. (You can fry them on the stove top as well but I find that they break easily.).

Turn them over and top each with a slice of cheese. Remove from the heat, and top each meatball with a piece of bacon. For the Sauce: Combine ground beef, bread crumbs, onion, egg, Worcestershire sauce, steak seasoning, salt, and pepper in a bowl; mix until combined. Using a slotted spoon, transfer onion and bacon to a plate and cool in refrigerator. In a large bowl, combine steak, ground beef, cooled bacon and onions, cheese, eggs, bread crumbs and salt, and mix lightly but thoroughly by hand.
